Malaysian BBQ Pork Jerky & Chicken Floss Sandwiches

It is amazing how the food of my childhood makes me happy! My last trip back to Malaysia, I brought back with me some BBQ Pork Jerky and Chicken Floss. Now, these two terms may be a little new to non-Asians. Known as Bakkwa or Ba Gua in Hokkien dialect (Mandarin: Rou Gan 肉干), is a meat jerky that usually comes in square and flat form. Chicken and pork are two popular meat used. It has a salty-sweet taste, as it is cooked over charcoal grilled that gives it a nice shiny deep caramel colour. Particularly in Malaysia and Singapore, Bakkwa is a popular gift to be offered to relatives and friends during Chinese New Year.
Chicken floss or pork floss. What is it? Chicken or pork floss is made from stewed meat, which then shredded so thinly and dry cooked in a wok until it is completely dry and seasoning is added. It has fluffy texture which can almost melt in the mouth! Chicken or pork floss is often used as topping for dishes like congee or noodles. Or eat as a snack!

I adore both BBQ pork jerky and chicken floss. When I saw Eating Asia’s post about The Winson Berger, it straight away reminded me my favourite way of making sandwiches when I was young! Using both BBQ pork jerky and chicken floss, cucumber and chili sauce – that was exactly how I used to make it! I used normal sliced white or brown bread, sometimes, bread rolls. I decided to make this last weekend for lunch using poppy seeds bread rolls. It tasted exactly like how it used to – slight crunch of the cucumber, sweet and salty pork jerky and ‘melt-in-the-mouth’ chicken floss. Heaven!
So, it was more of a luxury version of using both BBQ pork jerky and chicken floss. There is another version that I love, because of its simplicity. It is just grilled bread, spread with butter and filled with lots of chicken floss! You don’t need anything else. The flavours and slight crunch of the chicken floss with a hint of butter, make the best ingredients for sandwiches! It couldn’t have been easier to make sandwiches! It’s amazing how easy and tasty and I think I am going to finish eating my chicken floss this way!

Malaysian BBQ Pork Jerky & Chicken Floss Sandwiches
Yield: 2 persons
Ingredients:
2 bread rolls, halved
1 tbsp butter
2 tbsp chili sauce
8 slices cucumber
2 sliced BBQ pork jerky, cut into medium squares
2-3 tbsp chicken flossDirections:
1. Toast slices of bread. Spread butter on each.
2. Put slices of cucumber. Then, topped with BBQ pork jerky. Spoon over enough of chili sauce before sprinkle chicken floss on the top to finish.



I love both bak kwa and chicken floss, but have never thought of eating them together! I still have some chicken floss, will have to eat some tomorrow now that I've seen your post!

Chicken floss alone is great too… I just love its texture!
I have eaten both, separately, in bread but not together. I don't see why not. It must be tasting fantastic

I love Asian flosses though I only eat vegetarian and fish ones. I used to eat a big bowl of rice with just that (healthy, I know).

I have never tried vegetarian and fish ones… sounds good and rice with the floss… I think it's really good!
I really like chicken and pork floss too! How interesting seeing them in a burger, wouldn't have thought of it myself. Great idea!

I love this, you are reminding me on the old times bak kwa & pork floss bun with chilli sauce that I ate in KL when I was little gal. I missed that bun so much that I went to hunt during my KL trip, not easy to find but my ex colleague managed to find for me, so yummy!

Oh my god!!! I had forgotten about floss . . . I lived in KL for 6 years as a kid (far more years ago than I care to remember) and I loved it. Now if I can only find where I can get some here in London!

That is very interesting, Rachel! Try Chinese supermarket, they may have it. I have never tried to find one but when I go to Chinese supermarket next, I will ask.
I am obsessed with pork jerky and pork floss and fish floss and chicken floss. Whenever I go to Singapore or Penang or Kuala Lumpur, I will get A LOT. People would ask me if those are for gifts, I would say YEAH. GIft for myself. Haha!
Somehow toasts with generous helping of butter and floss tastes much better than just toast and floss. Great idea! Will make some once I get my hands on some floss and jerky

Nope .. not very possible to get processed pork products. But Malaysia and Singapore are very near and accessible. Thank goodness for that!

I love flosses. At least here, I can find vegetarian, beef, chicken floss at Asian stores. But I have to make my own fish floss
One time, I did trial to make my own beef floss from leftover roast beef. It worked well.

It is really delicious.. well, not sure about other places but in Malaysia, both chicken and pork floss are pretty easy to get.
This reminds me of the bak kwa and chicken floss buns sold by hawkers outside the cinema in Pg many years ago. Oh, I miss them so much!
